Chunky Beef Chilli Slow Cooker
This Slow Cooker Chili uses chuck steak instead of ground beef for a Keto chili without beans. Hearty, flavorful, gluten free, low carb.

We can never have too many chili recipes, am I right? You can find a Slimming World chilli, a vegan lentil and bean chili and now, finally, a low carb chili recipe on Supergolden Bakes.
This chunky, hearty beef chili is perfect for cold days, and mild enough for children to enjoy. It is also gluten free and syn free for those following Slimming World (watch out for the toppings).
Keto Chili – look, no beans!
Most chili con carne recipes contain beans which are not keto diet friendly. Texas chili recipes contain no beans and are (usually) simply made with chunky chuck steak and dried chillies.
I have tweaked this "no beans allowed" Texas chili to make it my own, adding diced tomatoes and tomato paste and adapting it for the crockpot.
Slow cooking is, after all, THE best way to make chili, allowing for the meat to turn meltingly tender and the sauce to become deeply rich and flavorful.
It is also VERY easy to make, pretty much a "dump and start" recipe, although for best flavor I would definitely advise you to brown the beef first.
WHAT GOES INTO MY CHUNKY BEEF CHILI RECIPE
This chili recipe is pretty bare bones – not a lot of ingredients but TONS of yumminess! I have added cacao powder and some unsweetened chocolate which you can skip, if preferred.
- Avocado oil for searing beef
- Chuck steak (braising steak), cut into chunky cubes
- Onions and garlic
- Chipotles in adobo for rich, deep, smoky flavor!
- Diced tomatoes
- Concentrated tomato paste
- Apple Cider Vinegar
- Beef broth
- Chili seasoning: ground cumin, smoked paprika, garlic powder, pinch ground cinnamon, salt and pepper
- Sukrin sweetener (or other Keto friendly sugar alternative)
- Cacao powder and unsweetened chocolate (optional)
- Cilantro (coriander) to garnish
Favorite chili toppings
- Sliced avocado – a must!
- Shredded cheese
- Sliced jalapenos for a bit of spice
- Sour cream
- Keto tortilla chips
Slow Cooker Chili Step By Step
Full measurements and instructions can be found on the printable recipe card at the bottom of the page. Please take a look at the steps and video before attempting this recipe!
STEP 1 Sear the beef, in batches, over medium high heat in a large casserole dish. Don't crowd the meat, allow plenty of space so that it browns rather than stews! This can take up to 10 minutes and you CAN skip it if you are short on time.
STEP 2 Add the beef into your slow cooker together with all the remaining ingredients (apart from the chocolate) and give a good stir.
STEP 3 Cover the crockpot with a clean towel and add the lid. This is to prevent a watery stew! Cook on low for 8-10 hours or on high for 4-6.
STEP 4 Uncover the pot and stir in the chocolate, if using. Use to forks to shred the beef. Taste and adjust the seasoning if needed.
STEP 5 Garnish with chopped coriander and serve with sliced avocado, shredded cheddar cheese, sour cream and chopped chillies. Serve over cauliflower rice or zero carb rice (I like Better Than Rice brand) if you like.

- 1/4 tsp ground cinnamon
- 2 tbsp Sukrin sweetener (or other Keto friendly sugar alternative)
- 2 cubes unsweetened chocolate (optional)
- cilantro (coriander) to garnish
